Baked feta pasta is almost too good to be true. The totally foolproof recipe tastes like something that took hours to assemble, not minutes.
While Finnish food blogger Jenni Häyrinen came up with the idea of baked feta pasta in 2019 (causing a nationwide shortage of feta cheese in Finland), it has since been made in ovens around the world. Videos of people trying the dish – and putting their own rounds on it! – have accumulated millions of views on TikTok, including one by Feel Good Foodie founder Yumna Jawad.
“There is something so sensational about this recipe because of its accessible ingredients, where the output is greater than the sum of the parts,” she says. “You start simply with feta cheese, tomatoes and herbs and end up with something restaurant quality done in the comfort of your home. My particular version of baked feta is full of fresh basil flavor and creamy whole feta cheese. “
First, place the tomatoes, oil, salt and pepper on a baking sheet. Then place your piece of feta cheese right in the middle and bake. “When you leave, add fresh garlic, fresh basil and mix well,” she says. Finish by adding your cooked pasta – she prefers cavatappi pasta ($ 10) – on top and mix everything. What you will end up with is a super creamy and delicious dish that will leave you scraping the dish until the last bite.
Roasted Feta Pasta
Ingredients
8 ounces of cavatappi dry pasta (or the pasta of your choice)
2 liters of cherry tomato
8 ounces of block feta cheese
1/2 cup extra virgin olive oil
1/4 teaspoon sea salt
1/4 teaspoon black pepper
2 chopped garlic cloves
1/4 cup packaged chopped fresh basil and more to serve
1. Preheat the oven to 400 ° F. Place the cherry tomatoes on an oven-proof baking sheet. Drizzle with olive oil and season with salt and pepper. Mix until well combined.
2. Place the block of feta cheese in the middle of the pan surrounded by cherry tomatoes and turn a few times to coat with oil and spices.
3. Bake in the preheated oven for 35 minutes, until the cherry tomatoes burst and the feta cheese melts.
4. Add garlic and basil leaves immediately to cooked tomatoes and feta and mix everything.
5. Transfer the cooked dough to the baking sheet and mix well. Garnish with fresh basil and serve hot.
